Cuenca is one of Ecuador's most colonial towns. It is in the middle of the country, and has a good reputation. Nearby is El Cajas National Park, a high-altitude plateau that is very easy to get to. I took an early-morning bus, met some other hikers on the way, and hiked with them during the day, catching a bus back to Cuence that evening.
